Gingersnaps
1 ¼ cups all purpose flour
1 cup white whole wheat flour
2 teaspoons baking soda
1 teaspoon ginger
1 teaspoon cinnamon
½ teaspoon cloves
¼ teaspoon salt
1 cup packed brown sugar
¼ cup butter
½ cup shortening
¼ cup molasses
1 egg
Sift together all dry ingredients except brown sugar.
In large mixing bowl, cream brown sugar, butter and shortening. Add molasses and egg and beat until combined.
Add flour mixture and mix until combined.
Portion scoop with cookie scoop, roll dough into balls and dip into sugar. Place 12 on a parchment lined baking pan. Bake 10 minutes at 375 degrees.
